Profit that block producers or searchers can extract by reordering, inserting, or censoring transactions within a block — e.g., front-running DEX trades.

Searchers scan the mempool for profitable orderings — sandwiches, liquidations, arbitrage — and pay for priority placement. MEV is an invisible tax on traders and an active design problem on Ethereum.
